No banana riper than this will ever pass my lips.

As soon as their green tips turn to yellow, I would rather eat paste.

If paste is no longer being made, then I'll eat mucilage instead.

Turns out that there's something to my preference beyond persnicketiness.

Green bananas, chock full of resistant starch, burn fat by blocking our bodies' use of carbs for fuel, tapping our tubby stores instead!

And they feed good probiotic bacteria while exorcising the bad ones.

They also facilitate the absorption of nutrients--especially that oft-cagey calcium.

All secondary gains to me, of course, but here's one capitalizing smoothie that's bound to energize even the brown-speckled banana eaters out there.


Green Banana Smoothie

Serves 1

  • 1 green banana, peeled
  • 1 big handful of spinach
  • 1 ripe kiwi, peeled
  • 2 tsp. chia seeds
  • zest and juice of 1/2 of a lime
  • 1 cup unsweetened almond or coconut milk
  • 2 pitted dates or a squeeze of honey (optional)

Combine all of the ingredients in a blender and give her a whirl.
